Local Burger: Greens, Turnips and Sweet Taters

Greens, Turnips and Sweet Taters
Serves 6-8 ½ cup servings

Ingredients:

  • 2-3 small-medium turnips, peeled and diced
  • 2-3 small-medium sweet potatoes, peeled and diced
  • 2-3 large bunches red/rainbow swiss chard, chopped (any leafy green like collards, mustard greens, or kale will work)
  • 2 Tbs. non-hydrogenated coconut oil
  • 2 Tbs. ume-plum vinegar
  • 2 Tbs. red miso
  • 2-3 garlic cloves, peeled and pressed in a garlic press
  • ½ tsp. Redmond’s Real Salt®
  • 2 ½  c. water

Instructions:

  • Preheat oven to 350 degrees                                                                                                    Mix all ingredients together in a large casserole dish and bake for 1 hour, stirring every 15 minutes.
