HyVee: Tomato and Avocado Salad

HyVee dietitian, Alyssa Field is back with another push for HyVee and Saint Luke’s Healthy Cooking Classes they are hosting throughout the month of February. There is a class Friday, and five more next week. Call your area Hyvee if you wish to register.  Cost is $10.

Tomato and Avocado Salad Recipe
Serves 8.

Ingredients:

  • 2 ripe tomatoes, coarsely chopped
  • 1 cucumber, coarsely chopped
  • 1/3 whole avocado, chopped
  • 20 large ripe olives, coarsely chopped
  • 3 fresh basil leaves, chopped
  • 1 ½ tbsp. balsamic vinegar
  • 1 tbsp. olive oil
  • Freshly ground sea salt, to taste
  • Freshly cracked black pepper, to taste

 

Directions:
1. For salad, in a large bowl, combine tomatoes, cucumber, avocado, olives and basil.
2. For vinaigrette, in a small bowl, whisk together vinegar and olive oil.
3. Evenly divide salad among 8 salad plates. Drizzle vinaigrette over each. Season individual servings to taste with sea salt and black pepper.

Nutrition Facts per serving: 60 calories, 5 grams fat, 0 grams saturated fat, 0 grams trans-fat, 0 mg cholesterol, 100 mg sodium, 4 grams carbohydrates, 1 gram fiber, 2 grams sugar, 1 gram protein. Daily Values: 6% vitamin A, 15% vitamin C, 2% calcium, 2% iron.
