Did you know March is national noodle month?  We honored the ultimate comfort food with a delicious recipe from NoRTH in Leawood.

Cavatelli Pasta (NoRTH Modern Italian Cuisine)

Ingredients:

  • Sausage, Raw & Pulled 6 oz
  • Olive Oil 1/2 fl oz
  • Garlic, Minced 1/8 tsp
  • Black Kale, Blanched 1/3 cup
  • Tomato Concasse 1/3 cup
  • Chicken Stock 2 fl oz
  • Tomato Sauce 4 fl oz
  • Parmesan Cream 2 fl oz
  • Butter 2 tbsp
  • Cavatelli Pasta 6 oz
  • Basil 1/4 oz
  • Kosher Salt 1/8 tsp
  • Fresh Ground Black Pepper 3 turns
  • Shredded Pecorino 2 tbsp
  • Truffle Oil 1/8 tsp

 

Directions:

Heat sauté pan, add sausage and brown. Add pasta, kale, garlic and tomatoes and toss.

Add stock, tomato sauce, butter, and parmesan cream and simmer until reduced.

Season with salt & pepper and toss in basil.

Place in center of coupe bowl and finish with truffle oil and pecorino.
