NoRTH Modern Italian Cuisine: Cavatelli Pasta
Did you know March is national noodle month? We honored the ultimate comfort food with a delicious recipe from NoRTH in Leawood.
Cavatelli Pasta (NoRTH Modern Italian Cuisine)
- Sausage, Raw & Pulled 6 oz
- Olive Oil 1/2 fl oz
- Garlic, Minced 1/8 tsp
- Black Kale, Blanched 1/3 cup
- Tomato Concasse 1/3 cup
- Chicken Stock 2 fl oz
- Tomato Sauce 4 fl oz
- Parmesan Cream 2 fl oz
- Butter 2 tbsp
- Cavatelli Pasta 6 oz
- Basil 1/4 oz
- Kosher Salt 1/8 tsp
- Fresh Ground Black Pepper 3 turns
- Shredded Pecorino 2 tbsp
- Truffle Oil 1/8 tsp
Heat sauté pan, add sausage and brown. Add pasta, kale, garlic and tomatoes and toss.
Add stock, tomato sauce, butter, and parmesan cream and simmer until reduced.
Season with salt & pepper and toss in basil.
Place in center of coupe bowl and finish with truffle oil and pecorino.
