- Cucumber Vinegar Salad
- 3 cucumbers
- 1 small onion (red or white)
- 1/2 cup vinegar (white with a splash of ume plum vinegar)
- 1/2 cup water
- 1/2 teaspoon real salt
Peel cucumber if peel is tough. Slice both onion and cucumber thinly. Mix together all other ingredients and pour over cucumbers and onion. Cover the bowl and store in fridge for a couple of hours - the longer the better.
Divine Blueberry cheesecake dessert
Blueberries are in season right now - a little early this year!
- 1/2 cup of blueberries in a bowl
- Dollop of sour cream or yogurt
- sprinkle of brown sugar
Beautiful presentation and tastes surprisingly like blueberry cheesecake. Strawberries taste delicious right now so feel free to add along with the blueberries.
