Lisa Farmer: Heirloom Tomato & Basil Pasta
- 1 box Dreamfields Angel Hair
- 2 tablespoons olive oil
- 5 cups coarsely chopped tomatoes (see note below)
- 1/2 cup chopped fresh basil
- 4 cloves garlic, minced
- Coarsely ground black pepper
- Shredded Parmesan cheese (optional)
1.Cook pasta according to package directions. Drain; return to pan. Toss with 1 tablespoon oil.
2.Meanwhile, in large bowl, toss together tomatoes, basil, garlic and remaining 1 tablespoon oil.Add salt and pepper, as desired.Arrange pasta on platter; top with tomato mixture. Sprinkle with Parmesan cheese, if desired.
Makes 6-8 servings.
Note: Use fresh, firm, ripe tomatoes. Could include heirlooms, grape, cherry, etc.
