Apple and Pecan Salad

Ingredients:

  • 2 tablespoons fresh lemon juice
  • 2 teaspoons sugar
  • 1 1/2 teaspoons extravirgin olive oil
  • 2 teaspoons Dijon mustard
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 6 cups torn Bibb lettuce leaves (about 2 heads)
  • 1 cup chopped apples
  • 2 tablespoons crumbled Gorgonzola cheese
  • 2 tablespoons chopped green onions
  • 1 tablespoon chopped toasted pecans

Instructions:

  • Combine first 6 ingredients in a large bowl, stirring with a whisk
  • Add lettuce and remaining ingredients, tossing gently to coat Makes 6 servings.
