Chocolate-Peppermint Shortbread Cookie Sandwich from The Mixx

The Mixx: Chocolate-Peppermint Shortbread Cookie Sandwich
Chocolate Shortbread Cookies
Ingredients:
- 1 cup – unsalted butter, room temperature
- 1 teaspoon – vanilla
- 1/2 cup – granulated sugar
- 1/4 cup – powdered sugar
- 1/3 cup – baking cocoa
- Pinch- salt
- 1 1/2 cups – all-purpose flour
- 1/4 cup- peppermint candy cane pieces (Garnish)
Instructions:
1. Preheat oven to 325 degrees
2. Combine butter, sugar and vanilla in mixer.
3. Add powdered cocoa to mixture.
4. Add flour.
5. Add Salt.
6. Chill in refrigerator for 1 hour.
7. Roll out dough to 1/4 inch thick.
8. Use cookie cutters to cut out shapes.
9. Bake in oven approximately 10 minutes or until cookies are set.
10. Pipe in peppermint buttercream to make sandwich cookies.
11. Sprinkle candy cane pieces on edges of buttercream.
12. Chill in refrigerator for 1 hour or until set.
Peppermint Buttercream Filling
Ingredients:
- 1 cup – unsalted butter, room temperature
- 1/2 cup – cream cheese
- 1/2 teaspoon – vanilla
- 1 1/2 teaspoons – peppermint extract
- 5 cups – powdered sugar
Instructions:
1. Combine butter, sugar, peppermint and vanilla in mixer.
2. Add powdered sugar to mixture.
