Cooking with Karli: Roasted-Garlic Smashed Sweet Potatoes
Roasted-Garlic Smashed Sweet Potatoes
2 pounds sweet potatoes
Salt to taste
¼ lb fat free cream cheese
Roasted Garlic Puree (recipe follows)
2 tbsp Smart Balance
White ground pepper to taste
Put the potatoes in a pot of cold water, add 2 tbsp. of salt. Bring to a boil over high heat. Cook till fork tender and smashable. Drain the potatoes.
Coarsely mash the potatoes. Beat in the smart balance, salt, white pepper, and mix briefly. Add the cream cheese and season to taste. Blend in the Roasted-Garlic Puree.
To make roasted garlic, put 1 cup peeled garlic into an oven safe dish, cover with 1 cup olive oil, a pinch of salt, and cover with foil tightly. Bake at 350 for 45 minutes, till soft and golden brown. Reserve for use as needed in refrigerator.
