- 1 TBSP Canola Oil
- 2-4 Skinless/boneless Chicken Breast (Halved or Diced)
- 1 can diced tomatoes with green Chile peppers
- 1 can kidney beans (drained)
- 1 can whole kernel corn (drained)
- 1 pinch ground cumin
In a large skillet, heath canola oil over medium-high heat. Add diced or halved chicken and brown on both sides. Add tomatoes, kidney beans and corn. Reduce heat to medium and let simmer for about 30 minutes or until chicken is cooked thoroughly. 1 serving has approx 285 calories.
Can be served on its own or with a side dish of brown rice, or with diced chicken can be eaten wrapped in a whole wheat low carb tortilla.
