Crockpot Lentil Soup

It’s Soup month & Fiber Focus month and on “Cooking with Lisa.” That means we are working for you to bring you a double duty recipe!  Each 1 cup serving contains 365 calories with 18g of protein & 17g of fiber!

Ingredients:

2 cups dry lentils
2 cups uncooked brown rice
1 cup chopped carrots
½ cup chopped celery
½ onion, chopped
8 cups water
15 oz can chicken broth
1 teaspoon garlic powder
Black pepper to taste
1 teaspoon dried oregano
1 bay leaf
1 cup sliced mushrooms, Baby Bella or your favorite

Preparation:

Place all ingredients in except mushrooms in a slow cooker.  Cover and cook on low setting for 7 to 8 hours or on high for 2 to 3 hours. Stir in the mushrooms 30 minutes before serving.

Serves 8. Each 1 cup serving: 365 calories, 2g fat, 0g saturated fat,
0g trans fat, 51mg sodium, 68g carbohydrate, 17g fiber, 3g sugars, 18g
protein.
