Pear Crisp
Gluten, Dairy, Sugar Free! High Protein, Healthy Fats!

6 medium Concorde pears, peeled, cored and cut into wedges or chunks
1/2cup + 1 cup Xylitol, granulated
1 tsp + ½ tsp Cinnamon
¼ tsp Nutmeg
¼ tsp Vanilla beans, ground (or 1 tsp vanilla extract)
¼ tsp Almond flavor or extract
½ cup Coconut oil, cold pressed
1 tsp Molasses
1 cup of Oats, whole rolled
½ cup Almonds, sliced

1. Place coconut oil in a warm area of the kitchen in order to bring it to room temperature until it becomes liquid
2. Meanwhile, mix 1 cup of xylitol with the molasses, this makes a sugar-free form of brown sugar, stir well to incorporate
3. In a bowl, combine the oats, “brown sugar”, liquid coconut oil, ½ tsp of cinnamon and the sliced almonds, set aside
4. In a separate bowl, combine the remaining xylitol & cinnamon, nutmeg, vanilla and almond flavors, then add the pears, toss gently to evenly coat the pears
5. In a 13×9 baking dish, pour the pears in and spread evenly
6. Sprinkle with the crisp topping to cover all the pears
7. Bake at 350 degrees for 40-45 minutes or until the topping is golden brown and pears are bubbling
8. Remove from oven and rest for 5-10 minutes before serving
