Summertime Chicken Salad recipe

  • 4 ounces cooked boneless, skinless chicken breast, cut into bite-sized chunks
  • 1 cup fresh berries (blackberries, blueberries, strawberries)
  • 1 cup diced fresh peaches
  • ½ cup fresh or canned pineapple chunks (juice packed)
  • ½ cup chopped celery
  • ¼ cup toasted walnut pieces
  • 2 Tablespoons shaved Parmesan cheese
  • ½ cup nonfat vanilla yogurt
  • 2 Tablespoons fresh mint, finely chopped
  • ½ teaspoon cinnamon
  • ½ teaspoon lemon zest
  • 4 cups lettuce mix (any combination)

In a medium bowl, combine chicken, fruit & celery.  In a small bowl, mix together yogurt, mint, cinnamon, and lemon zest.  Pour yogurt dressing over chicken and fruit mixture and toss to coat.  Serve two cups of spring mix on a chilled plate, and top with ½ of chicken mixture.  Sprinkle with ½ of the walnuts and Parmesan cheese.
