Popular Paleo diet takes a caveman approach to modern meal time
KANSAS CITY, Mo. — The Paleo Diet is rising in popularity and more businesses are riding the wave. Paleo Fit Meals provides meals based on the Paleo diet to about 200 clients in the metro.
That means meals that have meat, vegetables, fruit, nuts or seeds, and no grains or dairy.
Chef Dave Leuck enjoys the creative challenge of coming up menus within the Paleo parameters.
According to Lueck, “We have a certain structure that doesn’t include added grains, legumes added sugar and things like that….and then we get to be creative…making food that fits with that mold, that maybe people didn’t expect.”
Graham Ripple runs the business part of Paleo Fit Meals and is amazed by the Paleo movement’s growth. He hopes to take the company national.
Pumping up the popularity of Paleo is the Crossfit community. Many gyms across the country sponsored nutritional challenges which follow the Paleo Diet.
Now that eating Paleo is becoming more mainstream, it’s a bit overwhelming to the man who many consider the godfather of Paleo, Loren Cordain.
He wrote one of the first Paelo diet books 11 years ago and has just written another book, with more studies touting the benefits of eating a diet like out ancestors.
Cordain says, “There’s absolutely no risk to adopting a paleo diet. No risk, whatsoever the nutrient density of your diet will increase, the blood sugar levels will go down, your blood chemistry will go down.”
And KU Edwards Biology Professor says he’s proof it works. David Pendergrass lost 50 pounds, avoided cholesterol medication without being hungry.
He researched why the diet works and found proteins sent signals from your stomach to your brain to stop eating when your full. But he found the opposite happens when you eat carbohydrates.
“It’s clear to me eating carbohydrates…there’s a signal that happens in your head that says eat more….after you eat it!” Pendergrass said.
Pendergrass has taught a class called “The Smartest Loser”, which follows the Paleo Diet. Now, he’s writing a book with the same name. More information can be found at this link.
