Tips for making gourmet burgers on the grill or inside

KANSAS CITY, Mo. -- Michael Peak, executive chef for Morton’s Grille, had some interesting burger tips to get you ready for summer. He even shared a few tips on how to make burgers inside if you don't own a grill. 

Smoked Jalapenos
Ingredients:
3 to 4 jalapenos, fresh, whole
2 to 4 chunks of wood chips, hickory

Cooking Preparation Instructions:
1. Soak wood chips in water for 15 minutes prior to using
2. Place wood chips in disposable aluminum pan
3. Place on grill and close lid
4. When wood chips start smoking, place jalapenos directly on the grates of the grill and close lid
5. Smoke for about 15 minutes or until jalapenos become soft and pale green
6. Remove from grill and cool
7. Remove stem and seeds

Hamburger Meat
Ingredients:
2 lbs. prime ground beef, 80/20 mix
1 whole egg
3 oz. tomato juice
1 ½ tsp. table salt
½ tsp. ground black pepper
2 Tbsp. salad oil

Cooking Preparation Instructions:
1.) Break up ground beef in a bowl
2.) Add eggs, tomato juice, salt and pepper
3.) Mix thoroughly but gently
4.) Portion meat into 10-ounce patties. Mold on an oiled sheet pan or counter.
5.) Cross-cross with a knife 4 times each direction, approximately 1/8” deep.
6.) Burgers should be 1” thick and 4 ½” in diameter after being molded and criss-crossed.
7.) Place on lightly oiled sheet pan.
