- Over easy eggs (2)
- sautéed sweet potatoes (2 oz.)
- roasted corn (2 oz.)
- red peppers (2 oz)
- red onion (1 oz)
- 1 grilled chicken breast
- griddled corn tortilla (2)
- Olive Oil (2 Tablespoons)
Step 1: Roast: sweet potatoes, sweet corn and red bell peppers with olive oil salt and pepper to taste. Set aside.
Step 2: Grill chicken breast. Set aside.
Step 3: Sauté sweet potatoes, sweet corn, roasted red pepper and raw red onion with olive oil.
Step 4: Prepare eggs over easy in separate skillet.
Step 5: Layer hash, eggs and grilled chicken.
Garnish with Pico de Gallo and fresh cilantro. Serve with griddled tortillas.
Pico De Gallo
- 1/2 Small Onion
- 5 Roma Tomato
- 1 Large Jalapeno
- 2 Tablespoons Fresh Cilantro (chopped)
- Juice of 1 Lime Juice
- ½ teaspoon salt
- ½ teaspoon pepper
- ½ teaspoon granulated garlic
