Try a cajun spiced pan roasted filet in honor of J.Gilberts’ 20th anniversary

KANSAS CITY, Mo. -- An Overland Park restaurant is celebrating its 20th anniversary. Executive chef for J.Gilbert's, Ruben Rosales, shared one of the restaurant's special dinner menu items in honor of its celebration.

Cajun spiced pan roasted filet

Filet ingredients:
• (1) 8 oz. filet
• 2 T. garlic butter
• 1 T. Cajun seasoning

Filet instructions:
1. Heat a cast iron skillet until very hot.
2. Hand press the filet to about 1” thick.
3. Soften the garlic butter and smear filet with softened butter.
4. Coat both sides of the filet with the Cajun seasoning.
5. Place in skillet and blacken to preferred temperature.
6. Plate the filet and set aside.
Vegetable ingredients:
• I portion of Poblano Augratin Potatoes (portion chosen by user)
• 2 T. garlic butter
• 3 oz. shiitake mushrooms, stemmed, ¼” sliced
• 1 T. sliced scallions
• ¼ tsp black pepper medium grind
• 1-1/2 oz. port/sherry wine
• 2 oz. chicken broth

Vegetable instructions:
1. Microwave desired portion of potatoes until hot.
2. Place under salamander for 30 seconds to crisp cheese.
3. Add the potatoes to the plated dish, set aside.
4. In a separate pan, heat the garlic butter to sauté.
5. Add the mushrooms and quickly sauté.
6. Add the scallions, black pepper, port/sherry wine and chicken broth.
7. Reduce for 30 seconds.
8. Once finished, pour sauce over plated steak and serve.
