Recipes: Old-Fashioned (Slovenaian) Potato Salad

What you need:

5lb. Red Potatoes (thoroughly washed)
1 Med. Red Onion
1/2 Cup Canola Oil
1/4 Cup Apple Cider Vinegar
1/4 Cup Water
1 Tblsp. Salt
Pepper to taste

Directions:

Place washed potatoes in a large pot and cover with water. Place lid on pot, bring to a boil and reduce heat to a strong simmer. Cook until potatoes are tender (about 25 to 30 min.). Check for tenderness with a knife or fork. Remove tender potatoes. Larger potatoes may have to cook a few more minutes. Place all cooked potatoes on cookie sheet to cool completely or until barely warm.

Remove skin and eyes from potatoes and slice them thinly into a large bowl and set aside. They will break up in the stirring process.

Peel, quarter and thinly slice the red onion. After onion is sliced, run a large knife over all to make smaller thin pieces.

In a small bowl or measuring cup, place the oil, vinegar, water and salt. Stir well until well combined.

Sprinkle the onions over the potatoes and toss lightly. Sprinkle desired amount of pepper over potatoes. Stir the dressing again and pour over the potatoes. With two large spoons, mix well until blended (or you can use your hands to mix like mom used to do).TASTE IT.

Sometimes the above mixture of dressing is perfect. Other times you have to make a little more to acquire the perfect taste. It depends on how much of the potatoes you peel away.

If more dressing is needed, mix the following:
1/4 C. Oil
1/8 C. Vinegar
1/8 C. Water
About 3/4 tsp. Salt

Sometimes you will add all of the above additional dressing and sometimes only a portion. Just taste until the acquired flavor is perfect for you. Add salt and pepper to your desired taste. If mixture seems too dry, but the vinegar taste is strong enough, just add a little more water.

This recipe serves 15 or more easily.
