Meatballs in a Spaghetti Nest

Ingredients:

1 lb dry spaghetti

3 eggs

1/4 cup of Romano Cheese, plus extra for garnish

1 lb. of Marina’s Meatballs

1-24 oz jar of Marina’s Tomato Sauce

Directions:

Cook spaghetti according to directions on package. Drain the pasta and set is aside to cool. When the pasta is cool enough to handle whisk the eggs in a bowl and add to the pasta.  Stir to combine and add the Romano cheese, and 1 cup of tomato sauce. Heat remaining 2 cups of tomato sauce in a small pan on the stove.

Lightly spray two 12 cup muffin tins with cooking spray. Place about 1/3 cup of spaghetti mixture into each cup in the pan. Use a spoon, or your fingers to form a nest in the center of the spaghetti. Bake in a preheated oven for about 15 minutes at 400 degrees F.

Leave pasta nests in the muffin tins and top each with 1 tablespoon of tomato sauce and a meatball or two (depending on the size). Top with a second tablespoon of tomato sauce and a sprinkle of Romano cheese.

Serve with a tossed salad, warm local bread, and a warm side of Marina’s Tomato Sauce.
