Jason Sudeikis’ mom and Paul Rudd’s sister show off delicious recipes featured at Big Slick Celebrity Weekend

KANSAS CITY, Mo. --The weekend of June 17 through June 19 is the 7th annual 'Big Slick Celebrity Weekend.' The week's events will feature Rob Riggle, Paul Rudd, Jason Sudeikis, David Koechner and Eric Stonestreet and benefit the Cancer Center at Children`s Mercy. On Tuesday, June 14 Jason Sudeikis' mom, Kathy, and Paul Rudd's sister, Mandi, visited FOX 4 to talk about why the event is so important to them and their families. They also shared a few fun recipes that will be featured on the menu.

Cheddar, Bacon, Scallion Tater Tots

Ingredients

  • 3 pounds peeled large potatoes
  • 1 cup shredded cheddar
  • 1 cup crispy fine chopped bacon
  • 1 cup thin cut scallion tops
  • 3 Tbl. Flour
  • Kosher salt & pepper TT

Method
In a medium-sized sauce pot bring whole peeled potatoes to a boil and continue to boil for 6 minutes. Strain and set on sheet pan till cool to touch. Shred potatoes using a large cheese grater and then chop medium fine. Combine the rest of the ingredients and mix thoroughly. Form the potato mixture into tot shapes and then freeze for at least 3 hours. Fry tots at 350 until golden brown and crisp. Enjoy

Roasted Red Pepper Ketchup

Ingredients

  • 1 pint ripe tomatoes
  • ½ cup Red wine vinegar
  • ¼ cup  Brown sugar
  • 1 tea. Fresh cracked black pepper
  • 1 tea. Kosher salt
  • 2 Roasted red peppers
  • 1 Tbl. Worcestershire sauce

Method
In a medium-sized combine all ingredients except the Worcestershire sauce and cook over medium- high heat for 20-30 minutes stirring occasionally. Blend the mixture until smooth and then strain in through a fine strainer twice. Add the Worcestershire sauce and chill overnight.

Market Salad

Ingredients

Mixed greens 1 oz
Green kale, stem removed, hand torn 1.5" 1 oz
Red wine vinaigrette 1 oz
Jicama, peeled, 1/4" x 2" rectangles 1.5 oz
Red radish, thinly sliced .5 oz
Salt and pepper 1/2 pinch

Directions

In a mixing bowl, combine all of the ingredients together

Plating

Ingredients

Raspberry glaze 1 Tbl
2. Drizzle over the salad
Humboldt fog, crumbled into large chunks 1.5 oz
Sunflower seeds 1 Tbl
Fresh watermelon, 1" pieces 5 pieces

Directions

1. Place the dressed greens in a bowl
2. Drizzle over the salad
3. Evenly place around the greens
4. Sprinkle on the top of the salad
5. Place evenly around the base of the salad
