Pumpkin Spice Overnight Oats
¼ cup old-fashioned oats
¼ cup pumpkin puree
½ cup unsweetened almond milk
2 tsp pure maple syrup
½ tsp pumpkin pie spice
½ tsp vanilla
¼ tsp cinnamon
1 tbsp milled flaxseed
1 tbsp pecan pieces
Combine oats, pumpkin, almond milk, maple syrup, pumpkin pie spice, vanilla, cinnamon and flaxseed in an airtight container.
Stir to combine. Refrigerate overnight.
In the morning, add pecan pieces and stir to combine. Enjoy cold or warm in the microwave.
