Sweet Potatoes with “Sugared” Topping
- 6 lbs sweet potatoes
- 1 Tbs. olive oil
- 2Tbs. butter
- 1Tbs. salt
- 1 each egg
- 1 tsp. cinnamon
- ½ tsp. nutmeg
Topping- feel free to use any type of nut, or nut mix
- 1 C. sunflower seeds roughly chopped
- 1 C. pumpkin seeds roughly chopped
- 2 C. pecans roughly chopped
- 1 C. honey
- ½ C. butter
- ½ C. molasses
- ½ C. oats
Heat oven to 375°F.
Drizzle the sweet potatoes with olive oil. Place on a baking sheet and bake for 30 minutes or until soft.
Remove flesh from the skin and puree the sweet potatoes in a food mill, ricer or in a food processor until smooth. Add the remaining ingredients while the squash is still warm.
Mix together the topping ingredients.
Place the sweet potato pure in a baking dish. Sprinkle the topping on the sweet potato and bake in oven for 25 minutes or until golden brown.
