Rustic Quinoa Pilaf (Gluten Free/Soy Free)

Ingredients:

  • Organic Quinoa – 2 cups
  • Organic Walnuts – ¼ cup
  • Cranberries – ¼ cup
  • Tarragon – 1 tbsp
  • Celery – ¼ cup, diced
  • Organic Onion – ¼ cup, diced
  • Organic Extra Virgin Olive Oil – 2-3 tbsp
  • Sea Salt & White Pepper to taste

Instructions:

  • Soak quinoa for 15 minutes, then rinse with cold water in a metal strainer
  • Add 2 cups of quinoa to 2 cups of water and boil
  • Reduce heat and cook for 30 minutes or until quinoa is fluffy
  • Saute’ onions and celery in olive oil and tarragon
  • Add dried cranberries and chopped walnuts to sauté mix
  • Add all ingredients together with extra herbs, olive oil and sea salt to taste
