HyVee Veggie and Quinoa Pilaf

Hy-Vee Dietitian Kodi Moore is here with more on their summer health and wellness classes.  The next one is called "Sleep yourself Sane." focusing on foods that will actually help you fall asleep and get the rest you need.

Class participants will learn what a good night's sleep does for your mental mojo, what you can do to get the Zzzzs you need and what foods can impact your sleep.

Veggie and Quinoa Pilaf
Serves 4

All you need:
1 cup quiona
2 cups vegetable or chicken broth
1 small onion, chopped
1 orange or yellow bell pepper, diced
1 clove garlic, finely chopped
1 tbsp sesame oil
4 cups chopped spinach
½ cup pecans
4 oz feta cheese

All you do:
Rinse quinoa under running water; place in dry and heated pot. When you hear quinoa start to make a "popping" sound, add broth and cover. When it comes to a boil, reduce heat to medium and let simmer until broth is absorbed. Meanwhile, sauté onion, pepper and garlic in sesame oil. When tender, add chopped spinach and continue to sauté just until wilted. Remove vegetables from pan. Place pecans in pan and cook until just toasted. Combine quinoa, vegetables and pecans. Add feta cheese and stir. Enjoy!

Tip: For an extra sleep-enhancing boost, serve with a side of cherries.
