Grilled Coconut Pineapples

Serves  6


  • 1 fresh pineapple, sliced and cored
  • Olive Oil
  • 1 can of light coconut milk
  • Agave nectar or honey - to taste


  • Trim, core, and slice pineapple  (You can slice pineapple in planks or rings)
  • Pre-soak pineapple slices in light coconut milk (Soak overnight for optimal flavor)
  • Preheat a grill to medium heat (When grill is hot, lightly oil the grate)
  • Heat pineapple until grill marks show, 4-5 minutes
  • Turn and cook for 2-3 more  minutes
  • Remove from grill and drizzle with agave nectar or honey before serving
