Recipes from the Grill Mayor

Craig Jones of Lee's Summit has been named the Food Network's Grill Mayor.  It was a national contest where people submitted their grilling tips. Craig beat out hundreds of entries, and now he shared some of his tips and two great recipes you can try at home.

Remember:

  •  Clean grates and oil food
  •  Use wood as flavor component for gas and charcoal grills
  •  Keep lid closed while cooking
  •  Learn to cook direct and indirect for full flavor
  •  Convert favorite recipes to cook on the grill

 

Onion Dip

  • 1 large Red Onion
  • Olive Oil
  • 1 tsp kosher or sea salt
  • 1 tsp garlic powder
  • 1 tsp chili powder
  • 1 tsp onion powder
  • 1/4 tsp cumin
  • 1/4 fresh ground pepper
  • 2 tsp lime juice
  • 1/2 C loosely packed cilantro
  • 1/4 C favorite nuts (Savory Addictions smoked nuts add great flavor)
  • 1/2 C sour cream
  • 1/4 C cream cheese

 

Cut the onion into 4 thick slices (approximately 1/2 inch thick each). Stick a skewer through the onion slices to hold the "rings" together. Brush both sides of the onion slices with the olive oil. Grill over medium heat until the onion is cooked (soft to the touch). Place the cooked onion in a food processor along with the rest of the dip ingredients and process until smooth.

Serve with your favorite chips or grilled pita bread.

Grilled Angel Food Cake

  • Angel food cake
  • Butter flavored spray oil
  • Premium vanilla ice cream
  • 2 TBL warmed honey per serving
  • Coarse sea salt

 

Slice the angel food cake into 1-1/2 inch slices. Spray each cut side of the slice with the spray oil. Grill the angel food cake slices over medium flame until done.
