Green Monster Smoothie: Serves 2

All You Need:

  • 1 cup kale, leaves only
  • 1 cup fresh pineapple chunks
  • 1 cup pineapple juice
  • 1 frozen ripe banana
  • 1 avocado
  • 1 container light vanilla yogurt

All You Do:

  • Combine all ingredients in a blender.
  • Process on high speed until smooth.

Nutrition facts per serving: 210 calories; 7.5 g fat; 40 mg sodium; 33 g carbohydrate; 5 g fiber; 21 g sugars; 4 g protein.

Squashed Guts

All You Need:

  • spaghetti squash
  • plain tomato sauce

All You Do:

  • To make a batch, halve a spaghetti squash and scrape out the seeds.
  • Cook the squash, cut-side-up, in the microwave until it's tender when pierced with a fork, 12 to 15 minutes.
  • Scrape out the cooked squash strands and mix them with plain tomato sauce. Spoon  the mixture into shot glasses or other small cups and encourage guests to slurp up the guts without utensils.
