Chocolate Ganache Filling:
8 oz semi-sweet mini chocolate chips
½ cup heavy whipping cream
Pour chips into a medium mixing bowl. Slowly heat cream to a boil on the stove while stirring constantly. Remove from heat and pour over chips. Let stand 1 minute. Using a wooden spoon, stir mixture constantly until smooth. Place in the refrigerator to cool before using.
Mom's Crumb Topping:
½ cup soft unsalted butter
½ cup granulated sugar
¾ cup all purpose flour
2 tsp ground cinnamon
Blend sugar, cinnamon and flour in a medium mixing bowl. Add chunks of butter, using a fork to chop in until only pea sized lumps remain. Sprinkle onto a baking sheet and bake at 350 degrees for about 15 minutes or until just browned around the edges. Allow to cool before breaking up and crumbling to use.
