Zucchini Noodles with Pesto
- 1-2 zucchinis, spiraled
- 2 c fresh basil leaves (pressed very firmly down)
- 2 second pour of lemon juice
- 3 garlic cloves
- 2 tbsp salt
- 1-2 tbsp olive oil
- 8.45 oz container of coconut water
- 1 c pine nuts
Blend in food processor and toss with zucchini "noodles".
