Cafe Trio Spinach and Artichoke Dip
Serves 12


1 medium Yellow Onion – julienne sliced
1.5 Tbl. Minced Garlic
.25 cup white wine
1.5 lbs fresh Spinach
2 cups drained & quartered Artichoke Hearts
3 cups Heavy Cream 1.5lbs Cream Cheese, cubed
3 cups Shredded Mozzarella Cheese
3 cups Shredded Fontina Cheese
1 cup Grated Parmesan Cheese
.5 Tbl Tabasco Kosher Salt & cracked Black Pepper to taste

Sauté onions & garlic until translucent deglaze with white wine. Add spinach, toss and let it wilt. Add remaining ingredients — adding cheese gradually. Stir and cook over low heat until all the cheese is melted and the dip is thickened.
