Royals Farmland Pulled Pork


Pork Shoulder 2 pounds
Garlic, Crushed 6 cloves
Oregano 1 tsp
Cumin 1 tsp
Lawry’s 2 tsp
Chipotle Peppers, Chopped 2 T
Tomatoes, Diced ¼ cup
Onion, Chopped ½ cup
Beer, Stout 1 bottle

1. Rub pork shoulder with half of crushed garlic, oregano, cumin, Lawry’s, and chopped chipotle peppers. Seal, refrigerate, and marinate overnight – at least 12 hours.
2. Preheat oven to 350 degrees.
3. In a large pot, heat oil and sear all sides of pork shoulder.
4. Add onions and garlic – sweat until translucent.
5. Deglaze pan with stout, add diced tomatoes and bring to a boil.
6. Cover pot with lid and place in oven, for 3 hours, basting every 30 minutes until tender.
7. Pull pork from pot and set aside. Pull when cool enough to touch.
8. Reduce sauce by half and toss pulled pork thoroughly.
