Margarita Chicken Skewers


2 lbs boneless chicken thighs
½ cup triple Sec
½ cup tequila
½ cup lime juice
½ cup fresh cilantro leaves, chopped
1 tbsp chipotle pepper
2 tbsp dark chili powder
2 tsp ground cumin
2 tsp garlic powder
1 tbsp sea salt
50 ea skewers soaked in water


In a blender pitcher, combine the marinade ingredients. Place the chicken in the marinade in large Ziploc plastic bag. Squeeze out the air and seal. Let marinate in the refrigerator for 1 to 2 hours.

Set up the grill for direct cooking over medium heat and oil grate when ready to start cooking. Remove the chicken from the refrigerator and cut the chicken into 1 inch cubes. Skewer 3-4 pieces per and set on tray for grilling.

Cook the chicken on hot oiled grill and cook 3-5 minutes per side, or until done. You can mark these on the grill and finish in a preheated oven at 350 degrees for 10-12 minutes.
