R.J.’s Barbecue Shack brings breakfast for BBQ week

We welcomed R.J.'s Barbeque Shack, 5839 Lamar in Mission, Kan., to the FOX 4 Morning Show's BBQ Week leading into Labor Day weekend!

Here are the recipes he featured:

R.J.'s Bacon Bloody Mary

1 serving

  • 1 1/2 ounces Bakon Vodka
  • 1 1/2 cups Ice
  • 6 ounces Bloody Mary Mix (Taste of Florida)
  • 1 dash Worcestershire sauce
  • 1/2 ounce pickle juice
  • 1 each pickle spear
  • 1 each lime wedge
  • 1 each celery stick
  • 1 each smoked bacon piece
  • 1 each straw
  • 1 each large glass
  • 1 dash fresh black pepper

In a large serving glass add first 6 ingredients. Mix well or use shaker glass to mix.

Garnish with pickle, lime, bacon, black pepper and a straw.

R.J's Burnt End Hash

Serves 4

  • 2 ounces butter
  • 1 cup diced yellow onion
  • 1 cup sliced mushroom
  • 1 cup smoked bacon
  • 1 cup diced peppers
  • 2 cups diced potatoes
  • 1 tablespoon R.J.'s BBQ Rub
  • salt and pepper, as needed
  • 1 1/2 pounds smoked burnt ends
  • 1 cup sliced green onions
  • 10 each large eggs
  • 1 ounce light vegetable oil
  • 8 piece wheat toast
  • 8 garnishes of fruit

Heat large cast iron pan over medium heat. Add butter and melt. When hot, add next 5 ingredients and cook through, approximately 2-5 minutes.

In a separate pan, saute potatoes in light oil until golden. Salt and pepper to taste.

Add remaining ingredients to pan and mix. Cook approx. 2-5 more minutes and season to taste. Cook eggs to your preference. Toast wheat bread.  Put on plate and serve immediately.
