Hy-Vee recipe: Mint Chip Green Smoothie

Try this delicious and nutritious smoothie from our friends at Hy-Vee:

Serves: 2

All you need:

  • 2 cups fresh spinach
  • 1 large frozen banana
  • 1⁄8 cup raw cashews
  • 1.5 tablespoon cacao nibs
  • 1 tablespoon packed fresh mint leaves, minced (or ½ teaspoon mint extract)
  • 1/2 teaspoon vanilla extract
  • 1 cup skim milk or milk alternative
  • 1⁄4 cup coconut water
  • Stevia, to taste (optional)

All you do:

  1. Blend all of the ingredients except stevia together until smooth.
  2. Sweeten with stevia, if desired.
