Hot & Spicy Yard Long Beans & Beef


½ pound ground beef or pork
3 Tablespoons light soy sauce
1 Tablespoon brown sugar
2 Tablespoons water
1 pound yard-long beans, washed, trimmed and cut into 1 ½ -inch pieces
2 medium onions, halved and sliced
2 ½ Tablespoons peanut or corn oil
1 Tablespoon minced ginger
½ teaspoon chili flakes
½ teaspoon fennel seeds, chopped


In a medium bowl, combine ground beef and 1 tablespoon soy sauce.  In a separate bowl, combine remaining 2 Tablespoons soy sauce, water and sugar.  Heat 1 Tablespoon oil in a wok or large skillet over medium-high heat.  Add beans and stir until most are wrinkled, lightly browned and tender – about 5 minutes.  Transfer to a large bowl.

Add another tablespoon of oil to the wok or skillet.  Add onions and cook until browned – about 5 minutes.  Transfer to bowl with beans.

Add remaining ½ tablespoon of oil to pan.  Add ground beef & brown.  Add ginger, chili and fennel.  Stir to combine.  Add soy sauce and sugar mixture, then beans and onions.  Stir a few minutes, until well combined.  Serve hot.
