Mason Jar Salad: Rainbow Caprese

Ingredients:

2 Tablespoons balsamic vinaigrette
1 medium heirloom tomatoes, chopped
½ medium peach, chopped
½ cup fresh corn
1 ounce fresh mozzerella
1 cup spinach
5-6 fresh basil leaves

Directions:

Pour balsamic vinaigrette in the bottom of a quart-sized wide-mouth mason jar. Layer each ingredient in the order listed, leaving at least an inch of room at the top to allow for mixing the ingredients before eating. When ready to eat, shake the jar vigorously to coat ingredients in dressing then pour into a bowl and enjoy!

DIY Smoothie Pack: Green Sunshine Smoothie

Ingredients:
1 orange or 2 clementines, segmented
1 banana, sliced
1 peach, cubed
1 cup green grapes
2 cups fresh spinach
Liquid of choice: 4-6 ounces of unsweetened almond milk, plain yogurt, etc.
Optional healthy fat: 1 tablespoon chia seeds or ½ avocado
fruits and spinach in a gallon sized Ziploc freezer bag and freeze until ready to use

Directions:
To make smoothie, pour liquid of your choice in the bottom of the blender then add contents of frozen smoothie pack into blender container. Add in optional healthy fat and blend on high until smooth and creamy, adding additional liquid if desired.
