Shrimp and grits from Jax Fish House & Oyster Bar


1 cup heirloom grits
4 cups water
2 T butter
¼ cup grana padano
3 U-10 shrimp, shelled
1 T roasted bell pepper, diced
2 oz wild mushrooms
1 T shallots, sliced
1 t garlic, sliced
½ oz red eye gravy
Salt & Pepper to taste
Scallion garnish

In a medium sized pot bring the water to a boil.  Reduce heat to low and slowly whisk in the grits.  Cook on low until grits are tender.  Add butter and cheese.  Pour into a sheet tray and chill.  Once set, cut the grits into desired portion and fry until golden brown and crispy.  Saute the remaining ingredients until shrimp are cooked through.  Place grit cake on plate and pour shrimp and veggies over grits.  Garnish with country ham, scallion, and red eye gravy.
