Cooking breakfast with mom: recipe for breakfast sandwiches

KANSAS CITY, Mo. -- When Mother's Day rolls around this year why not surprise mom or the motherly figure in your life with a special breakfast? These breakfast sandwiches are quick and delicious and will help make her feel special on a day worth celebrating.

4 english muffins toasted
4 sausage links cooked sliced lengthwise
4 eggs
4 slices of american cheese(you can substitute bacon or ham for the sausages and use any variety of cheese)
Cooking spray
1-2 skillets (2 if u want to cook sausages and eggs at the same time)
Biscuit or cookie cutter or egg ring

Toast english muffins set aside, heat up skillet and add sausages and cook completely. Remove from pan onto a paper towel. Spray skillet with cooking spray and cook egg one at a time, it's easiest. Right before the egg is cooked to desired consistency. We like ours "over medium". Plate the bottom portion of the english muffin and add the egg. Top with a slice of cheese and cut 1-2 sausage links in half lengthwise and lay them on the cheese. Top with the remaining english muffin. Enjoy!
