½ and ½ Urban Farm Pesto


  • 1 cup packed arugula leaves
  • 1 cup packed basil leaves
  • ½ cup walnuts, toasted
  • ¼ cup Pecorino cheese
  • ¼ cup Parmesan cheese
  • ½ cup extra-virgin olive oil
  • 6 unpeeled garlic cloves
  • 1 peeled garlic clove
  • Salt & Pepper to taste


  1. Heat unpeeled garlic in a skillet over medium heat until the garlic is lightly browned, about 10 minutes. Remove garlic from pan, cool, and remove skin.
  2. Toast the nuts in a pan over medium heat until lightly brown.
  3. Combine the arugula, walnuts, roasted garlic and one clove peeled garlic into a food processor. Pulse while drizzling the olive oil into the processor. Remove the mixture from the processor and put it into a bowl. Stir in the cheeses.
