KANSAS CITY, Mo. -- Chef/Owner of Affäre restaurant Martin Heuser stopped by the FOX 4 studio to share some delicious recipes with our viewers.

Seared marinated bison steak

  • bison loin or top sirloin steaks
  • 2 cups olive oil
  • 2T grounded juniper berries


  1. Mix oil with berries, marinate steaks overnight in refrigerator
  2. Pan-sear the steaks for four minutes on each side
  3. Season with Montreal steak spice and rest before serving


Blueberry gastrique

  • 6oz caster sugar
  • 4oz red wine vinegar
  • 1 cup blueberries
  • 1 twig of rosemary
  • 1 cup bison stock


  1. Caramelize sugar to dark brown
  2. add berries, vinegar and rosemary
  3. reduce liquid 5-10 minutes over medium heat
  4. add bison stock, reduce to syrup consistency, season with salt and pepper


Apricot puree

  • 8 apricots
  • 3 oz white wine
  • 2 oz sugar
  • 1t apricot Schnaps


  1. quarter apricots
  2. bring wine and sugar to boil
  3. add apricots and cover
  4. cook down and puree with hand-blender
  5. strain through sieve and add Schnaps



  • 1 cups chanterelles, cut into quarters
  • caraway
  • olive oil
  • add marjoram, essence to taste


Pearl barley

  • 1 cup pearl barley
  • 2 cups stock
  • add butter, herbs, essence to taste
