Chicken and Sweet Potato Hash

On the Plaza, Power & Light and Overland Park.


  • Over easy eggs (2)
  • sautéed sweet potatoes (2 oz.)
  • roasted corn (2 oz.)
  • red peppers (2 oz)
  • red onion (1 oz)
  • 1 grilled chicken breast
  • griddled corn tortilla (2)
  • Olive Oil (2 Tablespoons)

Step 1: Roast: sweet potatoes, sweet corn and red bell peppers with olive oil salt and pepper to taste. Set aside.

Step 2: Grill chicken breast. Set aside.

Step 3: Sauté sweet potatoes, sweet corn, roasted red pepper and raw red onion with olive oil.

Step 4: Prepare eggs over easy in separate skillet.

Step 5: Layer hash, eggs and grilled chicken.

Garnish with Pico de Gallo and fresh cilantro.  Serve with griddled tortillas.


Pico De Gallo

  • 1/2 Small Onion
  • 5 Roma Tomato
  • 1 Large Jalapeno
  • 2 Tablespoons Fresh Cilantro (chopped)
  • Juice of 1 Lime Juice
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • ½ teaspoon granulated garlic
