Terri Allen’s chicken chili

KANSAS CITY, Mo. -- The cold temperatures and cloudy skies associated with winter can leave us feeling sluggish and as if you need to indulge in some comfort food. Fitness motivator Terri Allen shared one of her favorite recipes for chicken chili that will help satisfy the craving but won't put you over the edge if one of your New Year's resolutions is to get healthier.

Terri Allen's chicken chili

2 cans white chili beans or great northern beans undrained
1 can diced tomatoes and green chiles, undrained
1 can (14 oz) reduced sodium chicken broth
1 can reduced fat cream of chicken soup
1/2 cup chopped onion
1/2 cup chopped bell pepper
1 cooked rotisserie chicken, remove meat from bone and dice or chopped
1 package white chili seasoning

In a 4-quart stock pot, add 1½ cans of white chili beans or great northern beans mash the remaining ½ can chili beans with a fork and add to pot.
Add remaining ingredients.
Bring to a boil. Reduce heat and simmer 10 - 15 minutes stirring occasionally

Additional toppings options: dollop fat free sour cream or plain greek yogurt, low fat shredded or mozzarella cheese, crumbled tortilla chips
