Irish soda bread
1 & 2/3 cup room temp whole milk
1 & 1/2 Tbs. lemon juice
Combine & let sour for 5 minutes
Stir in 1/2 tsp. baking soda and let sit 2 minutes
3 cups all-purpose flower
2 Tbs. Sugar
1 Tb. baking powder
1 tsp Sea Salt
1 Cup Dried Currants
Preheat oven to 350 degrees, grease a 9inch pie plate or use a cast iron skillet.
Stir Dry ingredients with a whisk to combine.
Add milk to dry ingredients and stir to combine.
Knead for 3 minutes on a floured board. Dough will be sticky and wet. Form into a ball and put in greased pan.
Sprinkle top with 1/4 cup sugar and 1 tsp cinnamon.
Bake for 45 minutes. Bread should test dry with a cake tester/toothpick.
Spread a little unsalted butter on top.
Enjoy with orange marmalade if you like. Freeze left overs.
