Champ with Irish Sausage
6 to 8 unpeeled baking Yukon gold potatoes
1 bunch scallions- chop bulb and green stems
1 1/2 cups milk
6 tablespoons KerryGold butter
salt and freshly ground pepper.
Scrub boil the potatoes with their jackets on Finely chop the scallions and few sprigs of chopped parsley. Cover with cold milk and bring slowly to a boil.
(Simmer a few minutes, turn off the heat and leave to infuse.)
Mash the boiled potatoes, mix with milk and scallions. Beat in some of the butter. Season to taste with salt and freshly ground pepper.
The experts at Liquid Minded Concepts are teaming up with Irish Fest to offer two specialty cocktails, the Kansas City Rose and The Boss Magners. They'll serve up the Kansas City Rose, featuring Jameson Irish Whiskey and Thou Mayest Cold Brew Coffee along with The Boss Magners, featuring Jameson, Magners Irish Cider and Hibiscus Tea Syrup. These specialty cocktails will be available at the festival all weekend long.
The Boss Magners
1-1/4 ozs Jameson Irish Whiskey
2 ozs Magners Irish Cider
3/4 ozs Fresh Squeezed Lemon Juice
1/2 oz Phoenix Punch Tea Syrup**
Pour Magners into a chilled pint glass and set aside. Combine first three ingredients in a shaker tin with ice, shake vigorously and strain into the Magners Pint Glass, add ice, and serve!
To make the Phoenix Punch Tea Syrup, brew up a double strength batch of Phoenix Herb Co. Phoenix Punch Tea, remove the Tea leaves, and while still warm add in an equal amount of sugar to the water used to brew the tea.
Stir until sugar dissolves - additional heat may be needed.
The KC Rose
1-1/2 ozs Jameson Irish Whiskey
1 oz Thou Mayest Cold Brew "Concentrate"
1/2 oz Heavy Whipping Cream
3/4 oz Rich Simple Syrup
For shaken: Combine all ingredients in a shaker tin, add ice, shake vigorously, and strain into a chilled Rocks or Cocktail Glass. Add freshly ground coffee on top, and serve!
For frozen (makes 2!): Double all ingredients, and combine in a blender, add 1-1/2 Cups of Ice, blend until you’ve reached the consistency you like (you may want to add more ice!) pour into two chilled Rocks glasses, top with freshly ground coffee and serve!
To make Rich Simple Syrup, combine two cups of sugar to one cup of water in a small to medium pot over medium high heat. Stir occasionally until sugar is dissolved.
