KANSAS CITY, Mo. -- French toast is comfort food at its best. There’s nothing wrong with the typical way it’s done, but BBQ Pitmaster Myron Mixon cooks his up differently. Mixon says he cooks the slices on the grill, and honey and vanilla are his not-so-secret ingredients.
Grilled Honey Vanilla French Toast
Serves 3 to 6
3 large eggs
¾ cup of milk
1 tbsp honey
1 tsp ground cinnamon
1 tsp pure vanilla extract
2 tbsp sugar
Six ¾ -inch-thick slices day-old crusty bread, such as Italian, challah, or brioche
Favorite toppings such as whipped cream, fresh blueberries, and maple syrup
1. Heat a charcoal grill or gas grill to medium heat.
2. In a shallow bowl, whisk together the eggs, milk, honey, cinnamon, vanilla, and sugar. Coat each slice of bread on both sides with the egg mixture. Place the coated bread slices on the hot oiled grill and cook uncovered for 3-4 minutes per side, until browned. Serve with your favorite toppings.
To make on the stovetop: Prepare the bread slices as directed above. Melt 2 to 3 tablespoons of butter on a griddle over medium-high heat. Place the bread on the griddle and press it gently with a spatula so the surface is in contact with the butter. Cover and cook for 5 to 7 minutes on the first side until golden, flip until golden the other side, about 4 minutes.
