‘Naughty and Nice’ nachos

KANSAS CITY, Mo. --Each Monday from Dec. 5 to Jan. 2 FOX 4 will be featuring ‘Naughty and Nice Recipes.’ The naughty one is made the traditional way and the nice one is made with reduced fat, sugars, carbs, etc.  On Monday, Dec. 12, Chef Matt Chatfield visited FOX 4 to share how to make 'Naughty and Nice' nachos. Watch the video above for Matt's tricks of the trade to ensure your nachos , whether they are naughty or nice, are delicious.

Nice: Grilled scallop nachos with fire roasted chili guacamole

• 20 large sea scallops
• Olive oil
• Salt
• Freshly ground black pepper
• 10 tostada shells or
• 10 yellow corn tortilla chips
• Roasted chili guacamole, recipe follows
• Cilantro leaves, for garnish
• 1 cup pico de gallo
• 1 cup Queso Fresco, crumbled

• 1 ripe Hass avocado, peeled, pitted and coarsely chopped
• ¼ cup pico de gallo
• 1 each poblano chili, fire roasted, diced
• Salt
• Freshly ground black pepper

• Heat grill to high. Brush scallops on both sides with the oil and season with salt and pepper. Grill the scallops until golden brown and slightly charred and just cooked through, 2 to 3 minutes per side.
• Spread about a tablespoon of guacamole over each chip. Top the puree with a scallop and top each scallop with a dollop of the pico de gallo. Garnish with queso fresco, and cilantro leaves.

Fire Roasted Guacamole:
• Combine all ingredients in a mixing bowl and stir until combined, but still chunky. Season to taste.

Naughty: Chef Matt's fresh spinach queso dip

1 lb white American cheese
1 lb Pepperjack cheese cubed
1 cup whole milk
3 cups fresh cleaned spinach, shredded
2 cups Pico de Gallo (fresh salsa)

In a sauce pan over medium low heat, add the cheese and milk. Stir occasionally as the cheese melts. When mixture is smooth, add the shredded fresh spinach and stir. You may also use a crockpot to melt the cheese dip slowly unattended. Add the fresh pico de gallo, and stir in till combined. Serve with fresh toasted tortilla chips.
