As you plan your Memorial Day Picnic with family and friends.. don’t just grab the hotdogs and hamburgers– grab the noodles too!

Jasper Mirabile has an easy recipe for your vegetarian friends  and your picky little ones!

Jasper Mirabile’s Summertime Pasta

  • 1 lb. Pasta
  • 1 lb. Roma Tomatoes
  • 1/2 cup XV Olive Oil
  • Fresh Garlic Chives
  • Fresh Basil
  • Sea Salt & Red Pepper to taste
  • Grated Romano for dusting

Cook pasta al’dente. Set aside. Prepare BBQ Grill. Slice tomatoes in half and brush with olive oil.
Place tomatoes and garlic on hot grill and turn with tomatoes begin to blister & garlic turns golden. Remove all from grill and place in mixing bowl.
Season with salt and red pepper flakes. Add pasta & toss with basil and olive oil.
Dust pasta with grated Romano cheese.

Salsa Verde

  • 4 Anchovy Filets
  • 1 Slice Torn Bread
  • 2 Tbsp. Red Wine Vinegar
  • 2 Clove Garlic
  • 1 cup XV Olive Oil
  • 1 Bunch Fresh Parsley
  • 1 cup Fresh Mint
  • 1 cup Fresh Basil
  • Red Pepper Flakes to taste
  • Sea Salt to taste

Place all ingredients in a food processor except olive oil.
With the machine on, slowly add olive oil. Blend until smooth.
Serve over fresh grilled vegetables.
