Turkey Panini from Meals by the Week


8 slices sourdough bread
1/2 cup apricot preserves
12-16 fresh basil leaves
8 slices Havarti cheese
3/4 pound sliced turkey


Preheat skillet to medium heat. Assemble sandwiches by spreading apricot preserves on half of the slices of sourdough. Layer with 3-4 fresh basil leaves, 3 ounces of turkey, and two slices of cheese. Top with the remaining slices of bread. Spread butter on the outsides of the sandwiches, and lightly grease the skillet. Toast sandwiches until cheese is melted and bread is browned to desired crispness. Makes 4 sandwiches.
