Cajun Turkey, Jalapeno Sausage and Rice Soup from Dickey’s Barbecue Pit


1 medium red onion, diced
1 medium green bell pepper, diced
5 celery stalks, diced
4 cloves garlic, minced
1 large or 2 small jalapenos, minced
4 cups turkey stock (I make my own with the bones from the Dickey’s Cajun Turkey for added flavor)
3/4 cups uncooked rice
1/2 lb Dickey’s Jalapeno Cheddar Sausage, sliced into 1/8 inch slices
1 1/2 lb Dickey’s Cajun Fried Turkey (I prefer leg and thigh meat), pulled
2 tbsp olive oil
pinch salt
1 tsp freshly ground black pepper


In a 4 qt soup pot combine oil, onions, bell peppers, and celery. Cook over medium heat, stirring often, until onions are soft and translucent, about 10 minutes. Add rice, garlic, and jalapenos and continue to cook for 2 minutes. Add sausage and turkey then stir to combine. Add stock, salt, and pepper. Bring all contents to a boil, turn heat to low, and simmer for 45 minutes.
