Chicken Penne Pasta Carbonara Style


  • 4oz penne pasta cooked
  • 3oz roasted chicken
  • 1oz caramelized onions
  • 2oz peas
  • 1oz crispy bacon
  • 5oz black pepper garlic cream
  • 1tb fresh chopped herbs (oregano, parsley)
  • 1 egg yolk
  • salt fresh cracked pepper
  • pea shoots


  • simmer the cream sauce with chicken onions and 1/2 the bacon
  • add the penne pasta
  • toss in the herbs and peas
  • plate, finish with the remaining bacon pea shoots and egg yolk (optional)
