KANSAS CITY, Mo. — Nutritionist Lisa Farmer is back in the FOX 4 kitchen with an easy recipe that you can quickly whip up to enjoy at home or take to a gathering. You can find almost all of these ingredients at the farmers market. This salsa is delicious served with chicken, fish or crispy corn chips, Lisa says.

End of summer sweet corn and tomato salsa


2 ears fresh sweet corn, shucked & silk removed
8 cherry or grape tomatoes, halved
1 small ripe avocado, cubed
1/4 cup chopped fresh basil
1/4 cup finely diced red or sweet onion, rinsed after dicing
2 T. canola oil
2 T. fresh lime juice (or more, to taste)
1 clove garlic, minced
1 fresh jalapeno, seeded and minced
salt and pepper to taste


Boil sweet corn for 1-2 minutes, remove from boiling water and immerse in a large bowl of ice water. Cut corn kernels from the cob. Place corn in medium bowl and add remaining ingredients. Toss and chill until ready to serve.
